Chunky Chicken Peanut Wraps!

A good wrap is great to go! Here’s a delicious recipe for leftover chicken that will taste as good—or better—than any wrap you can buy at the deli.

* Total Time: 10 minutes
* Prep Time: 5 minutes

Prepare the peanut sauce the night before and you've cut your assembly time in half. Use only half the prescribed peanut sauce and you'll reduce the calorie load significantly. (Warning, though: this sauce is so finger-licking good, it may be difficult to resist!) Wrap it all up in Saran™ Premium Wrap or a Ziploc® brand Sandwich Bag, pack it with a chewy brownie and a healthy bean dip, and take it off to school or work.

Ingredients:

Makes 2 wraps

  • 30 ml (2 tbsp) chunky peanut butter
  • 5 ml (1 tsp) light soy sauce
  • 15 ml (1 tbsp) water
  • 240 g (8 oz) of grilled or baked chicken breast
  • 2 flour tortillas or your favourite sandwich wrap
  • 150 g (5 oz) of shredded iceberg lettuce
  • 1 large carrot, peeled and shredded

Directions:

  1. Place the peanut butter, light soy sauce, and water in a bowl. Whisk together until evenly combined. Set aside.
  2. Slice the cooked chicken breast into chunky slices and place half the amount of chicken on each tortilla.
  3. Divide the carrots and lettuce equally and place on top of the chicken in each tortilla.
  4. Drizzle the peanut sauce over the fillers. Then roll up the sandwich and wrap with Saran™ Cling Plus® or store in a Ziploc® brand Sandwich Bag.

Diane’s Entertaining Tip:
I collect fallen branches on my daily walk. Then I mix them in with Orange Tiger Lilies and Yellow Daisies for a beautiful fall bouquet.
