Chicken Pizza

Whip together a top-notch pie with the bare essentials: leftover chicken, broccoli and a pinch of spice are the key ingredients to this mouth-watering pizza.

Leftover chicken and a ready-to-bake pizza crust—have them on hand and you'll be on your way to making homemade pizza that tastes just as fresh (or fresher) than your local pizza parlour's. Be sure to seal up your leftovers with Ziploc® brand bags and containers.

Ingredients:

  • One 30 cm (12 in) pizza crust, ready to bake
  • 15 mL (1 tbsp) olive oil (or spray)
  • 125 mL (1/2 cup) tomato sauce
  • 250 mL (1 cup) shredded mozzarella, divided in half
  • 250 mL (1 cup) roasted chicken, cut into 2.5 cm (1 in) pieces
  • 125 mL (1/2 cup) broccoli florettes only, cut into 2.5 cm (1 in) pieces
  • 125 mL (1/2 cup) red pepper, seeded and sliced lengthwise into 6 mm (1/4 in) strips

Optional:

  • 1.25 mL – 2.5 mL (1/4 tsp to 1/2 tsp) oregano

Directions:

  1. Preheat oven to 225°C (450° F) with baking rack in the middle of the oven.
  2. Lightly brush or spray olive oil on pizza crust.
  3. Spread tomato sauce on pizza crust up to 2.5 cm (1 in) from the edge. Sprinkle 125 mL (1/2 cup) of shredded mozzarella over the sauce. Add the roasted chicken and vegetables over the cheese and top with the remaining 125 mL (1/2 cup) of mozzarella. Sprinkle on the oregano (optional).
  4. Bake the pizza directly on the rack until the crust is golden brown, the cheese is melted and the vegetables are cooked, about 7-10 minutes.
